Cooking Instructions:
Now, let’s embark on the step-by-step journey of crafting Besan Bharwa Mirch (Stuffed chillies):
Step 1: Preparing the Chilies
- Start by washing the large green chilies thoroughly and allowing them to air dry completely.
- Once they are dry, create a vertical slit in each chili to form an opening for the stuffing. If you prefer a milder heat, you can remove the seeds.
Step 2: Crafting the Besan Filling
- Begin by heating a pan or kadhai over medium heat. Add a touch of oil, cumin seeds, and hing (asafoetida). Sauté these aromatic spices for about 40 seconds until their flavors infuse the oil.
- Reduce the heat to low and introduce the besan (gram flour) to the pan. Stir constantly for roughly 15 minutes until the besan transforms into a luscious golden brown hue, exuding a delightful nutty fragrance. Exercise patience during this step to ensure the besan is impeccably cooked.
- Once the besan attains its golden glory, transfer it to a bowl.
- To the roasted besan, add a medley of spices and ingredients: amchur powder, haldi powder, dhaniya powder, red chilli powder, garam masala, black pepper, hing (asafoetida), finely chopped ginger, chopped garlic, chopped green chilies, fresh coriander leaves, and the requisite amount of salt. Combine these elements thoroughly to fashion a well-seasoned mixture.
- Gradually incorporate water into the spice blend, kneading it into a pliable dough. Take your time adding water to achieve the ideal consistency.
Step 3: Filling the Chilies
- Take each dried chili and generously stuff it with the besan spice mixture. Ensure that the chilies are uniformly filled to maximize the flavor infusion.
Step 4: Cooking the Stuffed Chilies
- In a wide pan, heat a small amount of oil and carefully arrange the stuffed chilies. Set the flame to low and allow them to cook for 1-2 minutes.
- After this initial cooking period, gently flip the chilies over and cover the pan with a lid.
- Continue to cook for approximately 4 to 5 minutes or until the stuffed chilies become tender and thoroughly cooked. The cooking time may vary depending on the size and thickness of the chilies.
Step 5: Presentation and Serving
- Once the Bharwa Besan Mirch Sabzi is cooked to perfection, transfer it to a serving bowl.
- This tantalizing dish is best enjoyed piping hot as a side dish to complement your lunch or dinner.
